Brown butter banana bread

115 g butter
3 ripe bananas
200 g flour
150 g brown sugar
2 eggs
1 tsp baking soda
Method
  1. Brown the butter in a pan until nutty and amber, then cool slightly.
  2. Mash bananas, whisk in sugar, eggs and the brown butter.
  3. Fold in flour and baking soda until just combined.
  4. Bake at 175°C for 55 minutes until a skewer comes out clean.
